You don't need to visit IKEA for a taste of Scandinavia. This comforting bowl includes the Scandinavian foods we've grown to love—without meat or dairy. Protein-packed lentil balls are nestled atop creamy mashed potatoes and served with a fruity blueberry sauce and hearty gravy. Think of it as a Scandinavian twist on a Thanksgiving meal—that comes together in under an hour!

Add all ingredients to a small mixing bowl and whisk to combine well. Set aside.
Microwave potatoes in a bag for 5 minutes or according to the package directions. Remove from heat, transfer to a medium mixing bowl and add the butter and milk. Mash with a fork or potato masher to desired consistency. Add salt and pepper to taste. Garnish with reserved parsley.

From Scratch Version

Combine all ingredients in a medium saucepan and bring to a simmer on low heat. Cook for 20 minutes. Remove from heat and let cool. Transfer to a covered container and refrigerate for at least one hour before serving.
Add 2 cups of water to a medium saucepan and add diced potatoes and ¼ teaspoon sea salt. Bring to boil, cover and reduce to a low heat. Cook for approximately 12 minutes or until potatoes are fork tender. Drain the water from the saucepan and add the butter and milk. Mash with a fork or potato masher to desired consistency. Add salt and pepper to taste. Garnish with reserved parsley.
