Breakfast is the most important meal of the day, and just because you’re dairy-free doesn’t mean you can’t enjoy some of the foods you used to! This vegan egg McMuffin recipe is sure to put a smile on your face and start your day off right.
Ingredients for Vegan Egg McMuffin
2 tablespoons Follow Your Heart Vegan Egg
1 English muffin or 2 slices of sourdough bread
1-3 teaspoons non-dairy buttery spread (try Melt)
1 slice vegan cheese (try Field Roast Chao)
1-2 slices plant-based deli meat (try Tofurky Hickory Smoked Deli Slices)
Salt and pepper to taste
1. Prepare the Follow Your Heart Vegan Egg in a bowl and add a dash of salt and pepper to the mix. Pour the mix into a medium saucepan and cook for 2-3 minutes until it is firmed up. Flip and cook to ensure both sides are lightly browned.
2. Toast your bread or English muffin and slather with Melt (or other non-dairy buttery spread) to taste.
3. Stack one piece of vegan cheese and as much hickory smoked Tofurky as your heart desires onto the bread.
4. When your vegan egg has fully cooked, place it on top of the Tofurky and voila…Egg McMuffin, vegan style!
