You don't need to visit IKEA for a taste of Scandinavia. This comforting bowl includes the Scandinavian foods we've grown to love—without meat or dairy. Protein-packed lentil balls are nestled atop creamy mashed potatoes and served with a fruity blueberry sauce and hearty gravy. Think of it as a Scandinavian twist on a Thanksgiving meal—that comes together in under an hour!

Short on time? Use the Quick Version which relies on a few store-bought staples to speed up the process. If you have a little extra time to spare, jump to the From Scratch version for a completely homemade meal.

Blueberry Sauce
 1 10 oz. jar store-bought fruit-sweetened blueberry jelly (such as Thrive Market, Crofter’s or St. Dalfour brand)
 ½ zest of a lemon
 1 dash of ground cinnamon
 1 dash of allspice
Mashed Potatoes
 1 1-lb. package store-bought microwaveable potatoes (such as The Little Potato Company, Simply Potatoes or Steamables brand)
 2 tsp non-dairy butter of choice (such as Miyoko’s or Earth Balance)
 2 tbsp non-dairy milk of choice (almond, coconut, hemp, soy or oat)
 1 tbsp finely chopped parsley, reserved
 1 pinch sea salt, to taste
 1 pinch ground black pepper, to taste
Mushroom Gravy
 1 package store-bought vegetarian/vegan gravy mix (such as Thrive Market, Simply Organic or Road’s End Organics brand)
 1 cup filtered water
Swedish “Neatballs”
 1 12-oz. package store-bought frozen buy meatless meatballs (such as Gardein, Lightlife, or Trader Joe’s brand)
 2 tbsp low-sodium vegetable broth or avocado oil
Blueberry Sauce

Add all ingredients to a small mixing bowl and whisk to combine well. Set aside.

Mashed Potatoes

Microwave potatoes in a bag for 5 minutes or according to the package directions. Remove from heat, transfer to a medium mixing bowl and add the butter and milk. Mash with a fork or potato masher to desired consistency. Add salt and pepper to taste. Garnish with reserved parsley.

Mushroom Gravy

Blend contents of gravy packet with water in a small saucepan. Bring to a boil, stirring constantly. Reduce heat and stir until thickened. Yields about one full cup of gravy.

In a medium skillet, heat meatless meatballs with vegetable broth or oil for about 5 minutes until well cooked and slightly browned around the edges.

To assemble the Scandanavian Good Bowl: in a medium dish or wide bowl, make a bed of mashed potatoes, add 3 to 4 “neatballs” on top, and slather with mushroom gravy and a side of blueberry sauce.
