“The root cause of type two diabetes, despite what people think, it’s not sugar or carbs; it’s actually fat. Insulin is like a key that unlocks a door in our muscle cells primarily so we can store sugar in the form of glycogen and use that for physical activity. And when we get too much fat in the muscle cells, eating this kind of standard Western diet – meat, dairy heavy – some of that fat ends up in the muscle. So it clogs up, jams up the lock from the inside so that insulin can’t unlock the door, and so your sugar levels start to go up. And over time, that puts more and more strain on our pancreas, which is the organ that makes insulin, and so we start out with this insulin-resistant state, prediabetes metabolic syndrome, and then that progresses over time through to type two diabetes.” – Dr. Jim Loomis
