In 2020, we partnered with plant-based dairy brand Elmhurst 1925 to create a mini Thanksgiving recipe ebook. These creamy, dreamy, garlicky dairy-free mashed potatoes are one of our favorite recipes from that collection. Far beyond bland, these spuds are flavored with two heaping tablespoons of garlic and swirled with a mound of chives to cut through the richness of the dairy-free butter. Each bite is velvety, smooth, and absolutely begs for second helpings. Stock up on just five ingredients and you’ve got this holiday staple side covered!
Dairy-Free Mashed Potatoes Ingredients
2 cups unsweetened non-dairy milk
5 lbs. Yukon gold potatoes, peeled
1/2 cup plus 2 tablespoons chives, chopped
4 tablespoons non-dairy butter
2 tablespoons garlic, minced
Salt and pepper, to taste
Dairy-Free Mashed Potatoes Instructions
1. Place the potatoes in a large pot and add water until potatoes are fully submerged. Bring to a boil and cook for 20 minutes or until the potatoes are fork-tender.
2. Drain the potatoes and move them to a bowl. Add non-dairy milk, butter, garlic, and salt and pepper to taste.
3. Whip with an electric or hand-held mixer until smooth and creamy. Stir in 1/2 cup chopped chives. Add a few tablespoons more non-dairy milk for a creamier texture if desired.
4. Garnish with reserved 2 tablespoons of chives and cracked black pepper. Serve hot.
